Dogs hear lots of things that we can't hear. If they hear something out of the ordinary they go into protector mode. They are on their guard and ready to defend their territory.

The dog hears or smells something it doesn't like. Could be human, cat, possum, whatever. Their senses are much more acute than ours.

The hair coming up means they are ready for serious action.

My dogs (properly) bark at a lot of things but when the hair comes up I know I have to pay attention.
